Hideyuki Shibata

Born in Rubeshibe, Hokkaido.
In 1999, he began training at the main branch of Restaurant Mona Lisa in Ebisu.
In 2006, he moved to France and trained at various restaurants
before becoming head chef of Restaurant Mona Lisa Marunouchi in 2009.
In 2012, he also served as head chef at Restaurant Mona Lisa Ebisu,
and in 2016, he opened La Crerière in Shirokane, based on the concept of
sunlight filtering through the trees, which earned him one star.
